Pineapple - Like gold nuggets in a jar!! ❤
Canning Pineapple!
I'm blessed because my husband cuts them all for me and then I can them! The end result is jars of delicious fresh pineapple in a very light syrup!
Directions:
Start by getting your jars clean and ready.
Fill your water bath canner with water - you need enough water to cover the jars by more than an inch.
Put a splash of white vinegar in your water to keep your jars from getting cloudy.
I like to keep my clean jars in the canner (heating up) while I prepare the pineapple. That way I know the jars are hot and ready to go.
Now on to preparing the pineapple:
You will need to cut off the outer part of the pineapple, core it and cut the pineapple into the size you want your pieces. I went with cubes. But you could do slices or whatever you like.
I made a very light syrup -
For 10 pints (that's about 5 pineapples - give or take depending on the size of your pineapples).
7 1/2 cups water
1 1/4 cups sugar
Prepare the syrup by combining water and sugar in a pan,
Heat slowly and boil lightly until the sugar is completely dissolved.
Put pineapple pieces in the syrup and bring to a boil.
Boil fruit in syrup for 10 minutes.
Remove the jars from canner and empty the water out of the jars into the sink.
Begin filling your jars with pineapple. I used a slotted spoon to put the pineapple in the jars. Using a canning funnel helps when filling the jars.
Ladle in the light syrup to 1/2 inch headspace.
Wipe the rims of the jars with a paper towel that has a little vinegar on it (this removes any residue and helps assure a good seal). Or you can use a paper towel that has some water on it if you prefer.
Put a lid on the jar, put on the band and tighten it fingertip tight.
Now you can place your filled jar in the water bath canner.
Make sure the water covers your jars by at least an inch over the tops of the jars.
When all your jars are filled, cleaned, and the lids and bands are on and they're all loaded in the canner... bring the water to a boil, put lid on canner, and boil for 15 minutes.
Have a clean towel laid out on the counter
When the 15 minutes is up use your lifting tool (canning tongs) lift each jar out and place it gently on the towel.
Leave the jars on the towel - undisturbed - for several hours.
You should start hearing the 'ping' sound as each jar seals!!
When the jars are sealed and cool, remove the bands,
Wipe the jars clean
Label the jars with the content and date.
For each pineapple you should get approximately 2 pints. I say approximately because it depends somewhat on the size of the pineapples, but I've noticed I average around 2 pints of pineapple chunks for every pineapple.
