We’re open today, Thursday, June 4th from 3:00–5:30 PM!

We still have a great selection of fresh beef in the case, including:
Brisket
Short ribs
New York strip steaks
Ribeyes
Filet mignon
And more!

Our pork selection is a bit more limited today, but we’ve got plenty of ground pork, bacon, and breakfast sausage to satisfy your pork cravings.

Feature: Korean Style Short Ribs
Looking to fire up the grill or try something a little different this week? Korean Style Short Ribs are a must-try!

What are they?
These ribs—often called flanken-style—are cut thin across the rib bones instead of between them, giving you that signature look with small round bones running across each piece.

Where do they come from?
They’re sourced from the short plate section of the beef carcass (lower rib area), known for great marbling and rich, beefy flavor.

How do you cook them?
Because they’re thin-cut, they cook quickly and are perfect for:
Grilling – hot and fast for amazing caramelization
Cast iron or flat top – a great indoor option with a perfect sear
Korean BBQ (Kalbi-style) – marinated sweet, savory, and packed with flavor

Our production crew got right down to work these past couple of days—and honestly, they surprised us! We didn’t think it would come together this quickly, so we didn’t get it into this week’s Meat Mail… but it’s here!

Bacon will be available for in-person purchase starting today at 3 PM.
