I recently made a fresh batch of freeze dried beef heart dog treats.
I start with whole Beef heart, remove all the fat and cubed it up. After filling 5 trays with 13 pounds of meat, I put it in a freezer for a minimum of 24 hours.
Once it's completely frozen, it goes into the freeze dryer.
The freeze drying process took about 27.5 hours.
Ended up with 3 pounds of treats. It's cool that the meat looks the same after the process.
I then package them into 1 gallon mylar bags until I put them in the treat bags.
And don't worry, my quality control manager (Ranger) tests every batch!
