One of the easiest ways to lose that moist texture? Leaving the cake in the oven too long.

Bake at:

325°F / 165°C

Start checking around 60 minutes.

Depending on your pan and oven, the cake may need closer to 75 minutes.

The center should be set, and a toothpick should come out with a few moist crumbs.

If the top becomes too dark before the center is done, loosely cover it with foil.

My biggest tip for softer fruit cake? Don't treat the dried fruit like it's already moist.

Soak it first.

For this recipe, I use orange juice for extra flavor.

Fruit mixture

1 cup raisins
1 cup golden raisins
1 cup dried cherries
½ cup dried apricots
½ cup chopped dates
¼ cup candied orange peel
½ cup orange juice

Soak for 20–30 minutes.

Then drain excess liquid and fold the fruit into the batter.

Bake at 325°F / 165°C for 60–75 minutes.

Let the cake cool completely before slicing.

Ever cut into a fruit cake and found all the fruit sitting at the bottom?

One thing that helps is making sure the fruit isn't carrying a lot of excess liquid when you fold it into the batter.

Ingredients
2 cups flour
1½ tsp baking powder
¼ tsp baking soda
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
½ cup butter
¼ cup oil
¾ cup brown sugar
2 eggs
2 tsp vanilla
1 tbsp orange zest
½ cup milk
2 tbsp honey
3 cups mixed dried fruit
½ cup orange juice
¾ cup walnuts
Method

Soak the fruit in orange juice for 20–30 minutes.

Important: drain excess liquid before adding the fruit to the batter.

Prepare the batter and gently fold the fruit in at the end.

Bake at 325°F / 165°C for 60–75 minutes.

Don't overmix after adding the fruit.

The next day, the flavors have had more time to come together.

I actually love a darker fruit-cake crust.

The key is knowing the difference between a nicely caramelized crust and a cake that's simply overbaked.

The center should still be moist and tender.

INGREDIENTS
2 cups flour
1½ tsp baking powder
¼ tsp baking soda
½ tsp salt
1½ tsp cinnamon
½ tsp nutmeg
½ cup butter
¼ cup oil
¾ cup brown sugar
2 eggs
2 tsp vanilla
1 tbsp orange zest
½ cup milk
2 tbsp honey
3 cups dried fruit
½ cup orange juice
¾ cup walnuts
BAKING TIP

Bake at 325°F / 165°C, not an excessively high temperature.

Start checking around 60 minutes.

A toothpick should come out with a few moist crumbs rather than completely wet batter.
