One of the questions I get asked most often is:
“What makes your bread different?”

And honestly, the answer starts long before baking.

Real sourdough is slow.
Long fermentation changes the bread itself. It helps break down gluten and phytic acid, supports digestibility, and creates deeper flavor naturally without needing additives or shortcuts.

Most commercial bread is designed for speed.
Our bread is designed for nourishment.

That slower process is part of why so many customers tell me they can enjoy our bread when other breads leave them feeling miserable.

This bakery was built from years of my own health struggles and ingredient research, so when customers come in asking questions, I never mind answering them. I actually LOVE those conversations.

Food should nourish us, not fight us all the time 🌾

How would everyone feel about fresh sourdough brioche buns for Memorial Day weekend (Saturday) pickup? Because these might be calling for backyard burgers, grilled onions, and paper plates on the patio ☀️🌾

One thing about Dough-Re-Mi that will probably never change is this:

We don’t work on Sundays.
The occasional pop up in the afternoon, maybe, but the schedule will never include Sundays.

As a Christian, I believe rest matters. Not just physically, but spiritually too. Sunday is a day for worship, family, slowing down, recovering from the week behind us, and preparing our hearts for the week ahead.

And honestly… in a world that constantly pushes for more, faster, bigger, now, choosing rest can feel almost rebellious sometimes.

There are moments where I look at this bakery and dream about what comes next. A larger space and room to gather, grow, and create. I know many of you dream that alongside us because you remind me often and honestly, it keeps my dreams alive ♥️

But right now, we’re in a season of waiting and baking has taught me something beautiful about that.

You can’t force dough to rise before it’s ready.
You can’t rush fermentation without changing the outcome.
Some of the best things happen slowly, quietly, and completely out of sight... while you wait.

Sometimes the waiting is part of the preparation.

So for now, we keep showing up faithfully. We keep tending what God has already placed in front of us. We keep resting when it’s time to rest. And we trust that when the timing is right, the next door will open exactly when it’s supposed to.

Funny how something as simple as bread can teach so much about life 🌾
