At harvest our fastest varieties are 14 days old and our slowest are 20.

That gap is the whole scheduling problem. Plant everything on the same day and you harvest on a different day for every variety. So the planting schedule is staggered on purpose, the ages are deliberately different, and a mixed harvest lands on one day.

What you want on that day is greens that are not too old and woody and not too young and delicate. That is where the volume is and it is where the shelf life is.

That schedule took a lot of trial and error. It is not something you get right at first.

Right now we are running a couple of varieties of bok choy, plus kale, arugula, cabbage, mustard greens and radish greens.

That list is not random. We pick for two things: how robust the variety is in the system, and how nutritionally dense it is.

Arugula is worth calling out. It was one of our best selling products when we were producing, and it is also one of the harder ones to grow well. We put real time into it because the demand justified it.

These are full spectrum LED bars, and they are here to replace the T8 and T5 fluorescents most growers start on.

Three reasons. They pull less electricity. They throw much less heat, which matters when you are stacking levels in a closed room. And they last years longer, so you replace them far less often.

We run them 16 hours on and 8 hours off.

Inside every channel is a mat. The seed germinates and the roots grow down through.

Two reasons it is there. It gives much tighter control over the watering cycle, and it gives the roots something to grow into.

It is not soil and it is not coco. It is a reusable fabric mat rated for 70+ plantings, so it comes out, gets cleaned, and goes back in.

We did not start here. Early on we grew the way most people start, in 10 by 20 trays of soil, watered from the top.

When we wanted to expand, we built a semi-hydroponic version of it. Flood and drain, so the trays watered from underneath instead of over the top. Then a full hydroponic system, a smaller version of what you are looking at now.

Ten years of that progression is why this looks simple. None of the steps were obvious at the time.

This rack is vertical, six production levels, and every level waters on its own.

Each has its own valve, so you can isolate one level to harvest it and the other five never pause. It is also why microgreens and baby greens can run on the same rack at the same time.

The smallest unit is one six-foot channel. One variety in it, carried by one person. It starts in the germination station and moves onto a level when there is room, which is what keeps a steady flow of crops going in and coming off.

Lay a soaked grow mat flat and it holds water for two or three days before it evaporates out. Stand the same mat vertical and it drains in about ten minutes.

That one property changed how we harvest. Instead of cutting greens wet and then fighting the moisture all the way to the box, you hang the mat, walk away, come back, and cut a clean dry product.
