I am excited to finally be getting enough extra milk (our cow Sadie is bottle fed goat milk 2x a day) from the goats to start making cheese for our family! 🐐🧀

Tonight I am making the start of some fresh goat chèvre!

What is goat chèvre, you ask?

Chèvre is a soft, creamy goat cheese with a mild tangy flavor. It can be spread on crackers, bagels, and bread, crumbled onto salads, added to pasta dishes, or even enjoyed with a drizzle of honey. Fresh chèvre is one of the easiest and most delicious cheeses to make at home!

Using the New England Cheesemaking Supply Chèvre packet, the process is surprisingly simple:

🥛 Warm 1 gallon of goat milk to 86°F.
🥛 Sprinkle in the chèvre culture packet and stir gently.
🥛 Cover and let sit at room temperature for 12–18 hours.
🥛 Once the milk forms a soft curd, transfer it into cheesecloth or butter muslin.
🥛 Hang and drain for 6–12 hours, depending on how firm you like your cheese.
🥛 Add a little salt, garlic, and or everything seasoning to taste and enjoy! We love to pair with crackers!

The hardest part is waiting while the cultures work their magic! I’ll be sure to share updates and photos of the finished cheese tomorrow.

Looking for a fun, hands-on summer experience for your child? Come spend a week on the farm at Channell Homestead!

Our campers don’t just visit the animals—they become farmers for the week! Children will have the opportunity to help care for horses, goats, rabbits, chickens, ducks, geese, alpacas, pigs, turkeys, guinea pigs, cow, and more while learning about daily farm life.
