This is the bowl that divides the table. Some call it broccoli cheese soup, while others insist the potatoes turn it into chowder. Either way, nobody leaves much behind.
Loaded Broccoli Cheese & Potato Soup
Melt 4 tablespoons butter, then cook 1 diced onion and 1 cup diced carrots until softened. Add 2 minced garlic cloves and ¼ cup flour.
Slowly whisk in 3 cups chicken broth and 2 cups whole milk. Add 4 cups diced potatoes and simmer until nearly tender. Stir in 3 cups broccoli florets and cook for another 6 to 8 minutes.
Lower the heat and add 1 cup heavy cream. Stir in 3 cups freshly shredded sharp cheddar a little at a time. Season with salt and black pepper, then finish with bacon and extra cheese.
The potatoes make it thick, the broccoli keeps its texture, and the cheddar turns the broth into the part everyone wipes from the bowl.
