Today’s selection of raw pure varietal honeys. Nothing added, the honeybees make these honeys by collecting nectar from the specific flowers on the label. Not from our honeybees Master Beekeeper Tom Wilk looks to commercial beekeepers to add to our ever-growing selection of different varietal honeys from all over the world. Tom will be here until 3pm today and in Howard Beach tomorrow!

So I was playing around on Canva..... Wilk Apiary North is where I processed every harvest last year and this year. We also were able to get our 1st harvest from the apiary right behind the building. I'm trying to make a special label and jar for our inaugural harvest at Wilk Apiary North and this is how I started.

I am harvesting my 2 hives in Lower Manhattan on Monday morning 10/12/26. All the honey frames have to be carried down 2 flights of stairs from the rooftop on the 31st floor to the elevator on the 29th floor. Looking for volunteers, I’ll send you a jar of this really precious honey about 2 or 3 weeks afterward as a thank you. Call Tom at (917)513-2508 if you can help.

🍯 Take a look at the new selection of Varietal Honey we are bringing out this month. You can taste any or all of them before buying some.
Varietal honeys are not from my bees, they are from my friends who move the honeybee colonies to pollinate different crops. They are not infused with the item in the label, the honeybees go to those flowers and turn the nectar into a specific honey as labeled.
