We are happy to announce our first new creamed honey made by Master Beekeeper Tom Wilk in our new production facility called Wilk Apiary North.
In New York States famous Catskills Area our new building is in Swan Lake the town of Betel in Sullivan County.
We will post a video as son as we can showing Tom bottling it after creaming it for over 24 hours in our new Lyson Honey Creamer.
This spreadable honey is NYS Honey with a hint of the NYS Maple Syrup added to the creaming process.
Bespoke and 100% Natural with 100% Pure, Natural NYS Honey and Maple Syrip.

In 1935 Elton J. Dyce patented the method to make creamed honey. Honey naturally will crystalize, but he wanted to have it crystalize with smaller crystals so it would be a naturally spreadable honey. Come see Master Beekeeper Tom Wilk at the 1st weekly St. Mel’s Harvest Market. Tom will be there on a rotating basis when he doesn’t have other Saturday commitments.
This is gonna be real fun and we’ll have all our local honeys as well a a changing assortment of varietal honeys each market.

Well the Queens have arrived. The plan is to split 10-15 hives by tomorrow.
I will mix where these special Buckfast Queens will go and make sure I label the hives they are in.
1st time using this breed and very excited as they are supposed to be super chill and good honey producers.

Swarms are interesting. This time of year they mean you got a colony of honeybees through a very tough winter.
They are healthy and want to carry on their genetics by creating another colony.

I rarely do swarms. Skipped a market today because I was under the weather and this swarm decided not to leave yesterday (rain).
So, I went out and put about 15,000 honeybees in a box to make a new hive.
