Ummmm yeah. I made homemade granola. Wtf? Who am I? And more importantly, why haven’t I ever made granola? It’s so good!

This is my “New Year” favorite cooler/mocktail. And yes us has apple cider vinegar in it…but I’m telling you it’s so delicious and refreshing. Oh and yeah, it’s great for you and your gut.

Most of us are aware of the health benefits of apple cider vinegar, but let’s be honest it’s hard to actually enjoy drinking it. But I swear, this is good!!! If you don’t mind a little bit of sour/tart/sweet flavor, you’ll love it.
Mix together:
Big glass of ice water
Two teaspoons of apple cider vinegar (I like the flavored options)
1/2 of fresh squeezed lemon
A splash of your favorite juice (fresh or a good quality jarred)
A few shakes of cinnamon
Stir or shake very well and enjoy♥️

Next level tuna salad, it’s like a party in your mouth:
Albacore tuna
Garbanzo beans
Pepitas
Brown rice
Chopped spinach
Chopped parsley
Chopped cucumber
Chopped tomato
Chopped capers
Chopped Kalamata olives
Everything bagel seasoning
Dried dill
Lemon juice
EVOO

58….well I’m not sure how that’s supposed to feel yet. But here I am on day two. My birthday this year was really different then then the norm, no big deal, went to work and chilled at home with a delicious homemade meal, it was nice. Yesterday’s I was reflecting on something my Dad used to say on his Birthday “it’s just another day”. I never quite understood what he truly meant by that, but now I think I finally get it! A major 💡 moment for me! The truth for me is that YES it’s just another day, which is so simply awesome!!!!
Thank you to my love & sweet friends who showered me with such thoughtful gifts (if you know me well, you know I’m not really comfortable receiving gifts), you all know me so well…grocery store lemon cake, orange flowers, wine and mini art for my kitchen are all some of my favorites, thank you, I’m so grateful.
Sooooo okay, BRING IT 58…I’ve got big plans for you!

A couple of weeks ago our humans took us to their favorite breakfast spot (we had bacon) and then for a long walk on the beach❤️...One of the best days ever!!!
