Ridgetop Farms Beef Cattle, 4-H Rabbits, Eggs Herefords & Salers: no antibiotics or steroids, pasture raised. Rabbits meet 4-H requirements and have placed well in the past.

Sold as inspected freezer beef, 1/4, 1/2 or whole steers.

4-H Rabbits: Mini-Rex, Lionhead, Lop-Eared - not registerd but well kept records. Rabbits are exercised and rotated daily between cages and grass pens. Chickens & Ducks are free range and happy! Eggs!! $2.00/dozen

The woods. This week i go out in the morning to rebuild fence. Im welcomed by the sights and sounds that the climate and environmental crowd tell you doesn't coexist with livestock and logging. Turkey, deer, bobcat, coyotes, squirrels, fox, and eye popping list of song birds live here with cattle, goats, and horses. This woods has been logged at least twice in my lifetime and are nearing a third. Don't believe their hype. They are lying and making millions doing it.

I love autocorrect. The following post left out words that make sound like a dip.
The wife whipped "up" a nice low "carb" meal. I promise i can type although my fat fingers do hit more than one letter at a time on occasion. With that said we still have plenty of hamburger patties and packages in stock. Its healthy and delicious.

Round steak, it's one of my favorite cuts but I don't sell very much because people don't know what to do with it. But if you eat fajitas at the Mexican place your eating it. Usually I make fajitas out of it but this time I was craving Chinese. To prepare the roundsteak for fajitas I usually brown the outside then slice it thin. This time I did not. I sliced it as thin as I could, maybe should have hit again for shorter pieces then I crushed lime juice onto it. According to cowboy cook Ken Rollins the citric acid helps to break down the fibers making the cut more tender. I seasoned it and let it marinate in the lime juice and teriyaki from hunters honey farm and went to feed the stock. The meal was delicious and the lime juice trick... it works.

I do love spring. Trying to shuffle cows around but I had 1 with a new calf that refuses to cooperate but I did get my steps in trying to get her back with the group. Have one goat that always to be in your pocket and she decided to tag along on a search. We also got someone's of wildlife that livestock production supposedly hurts. Contrary to to what environmentalist and wildlife managers like to throw out in the public space cattle, sheep, and goat production in managed systems does not hurt and actually helps deer, wild turkey, bobcat, box turtle, and many birds.

Haven't posted in a bit but it has been a busy couple of weeks. Big project is a fence rebuild.Started on the perimeter fence in one pasture and then found some trees down in another. Then im going to totally redo the division fence. I've come to the conclusion I don't like the plan NRCS came up with when I did the EQIP program many years ago so im going to be rolling up wire and pulling posts.
