Some days I’m in the mood to cook some fantastic food. I’m always in the mood to eat it!! Today was one of those days and what an awesome breakfast I had. It included “Seriously The Best Tofu Scramble” from (check out the website https://rainbowplantlife.com/eggy-tofu-scramble/ -recipe-container-11576) and some Apple sour dough bread (wrote and amazing!!) from . It was so good I went back for seconds on both items. Tonight I plan to make Cauliflower Steaks with Caramelized Shallots from along with some more apple sourdough bread do I don’t waste this huge head of cauliflower I got from the farmers market. I’m also making some stinging nettle greens since I’m harvesting some for the farmers market tomorrow.

A couple of weeks ago I went into my bee hives and discovered two of them were queenless. I knew this was the case because there were no eggs in either and the bees from the swarm I caught had no brood or baby bees in the making. So I transferred frames with eggs in both hives so the bees could make a new queen. I waited 16 days (the time it takes to make a new queen) plus a few more days for her to take hey mating flight. I was delighted to see plenty of eggs in both hives in addition to some empty queen cells. The baby making has begun!!

🌍 Earth Day Reminder 🌱
The future doesn’t have to be about loss, destruction, or cleaning up messes we could have prevented. It can be about innovation, thriving ecosystems, meaningful jobs, and real opportunities created by caring for our planet.
Every choice we make today — how we grow food, use energy, protect water, and support our communities — shapes the world our children will inherit. Climate change is real and man-made, but so are the solutions.
Let’s choose progress over pollution.
Hope over harm.
And action over apathy.
Because a healthier planet means a better future for all of us. 💚🌎

Thank you to all of those who came out to our and Mushroom Growing Workshop yesterday. We learned a lot about mushrooms, how to grow them at home, and got to taste some mushroom dishes including a mushroom pasta salad, mushroom patè with a fig chutney, and of course our Mushroom jerky.

🐝✨ We caught our first swarm of the 2026 bee season—on the FIRST official day of spring! ✨🐝
Talk about perfect timing. We’re beyond excited to welcome new busy brewers to the Eco Sun Farms apiary! These incredible pollinators play a vital role in supporting healthy ecosystems, abundant harvests, and resilient food systems—and we’re honored to give this swarm a new home on the farm.
Here’s to new beginnings, longer days, and a season full of growth, blooms, and collaboration between plants, people, and pollinators 🌼🌞
Welcome home, bees 💛

Good morning!! Happy Wednesday growers, producers, pollinators, and consumers!! We hope that you are having an amazing week and beautiful sunshine. We’re so excited to see warmer days after the freezing temps, ice, and even some very unexpected sun. It’s hard to believe just last week the farm was looking like a struggling tundra. But now the bees 🐝 are buzzing, the trees 🌳 are blooming, the seedlings 🌱 are being introduced to the new homes, the mushrooms 🍄 are thriving, the fish 🐟 are swimming, the worms 🪱 are wiggling and the chickens 🐓 are laying. Oh how I love spring and short sleeves in Atlanta. I wish you all a beautiful and productive day!!! Don’t forget to get your daily dose of vitamin D 🌞.

From straw to harvest 🍄✨
At Eco Sun Farms, every grow starts with intention 🌱
We pasteurize straw, inoculate it with mushroom spawn, and grow in reusable buckets to reduce plastic waste ♻️
Not only that but buckets allow for multiple points of mushroom growth.
Next comes the magic ✨
Pinning begins… tiny mushrooms appear… and before you know it, they’re growing fast and strong.
From just ONE hole in a bucket, we harvested ½ a pound of beautiful pink mushrooms 😍
Proof that when conditions are right… the mushrooms will grow!!

MABA beekeepers travel to Kentucky this week for the North American Honey Bee Expo. We had an opportunity to meet beekeepers from Bronx, NY to Tanzania 🫰🏾🫰🏾. Learning, laughing, networking… A great time was had by all.

Recently, members of the MABA leadership team toured a potential new meeting and programming space—and I was honored that this visit also marked my first official act as a new board member of the Metro Atlanta Bee Association. 🐝
The space offers the flexibility to host small meetings, larger gatherings, workshops, and community events, with free parking and room to grow. It also provides space to store MABA materials and even house bee hives for hands-on education and workshops.
What stood out most was the opportunity to introduce MABA to more members of the surrounding community while continuing to build meaningful connections around education, sustainability, and pollinator support. Excited for what’s ahead!

If you’ve got a teenager at home and you ask them to handle one simple task while you’re gone… you already know how this story ends 😂
I asked my son to pull a few sweet potatoes from one of our raised beds for Thanksgiving prep. Of course, it didn’t happen. So when I got home, I handed him a flashlight and sent him right back out to dig them up in the dark.
And I’m glad I did — because just like always, our homegrown sweet potatoes were absolutely delicious! 🧡🍠✨
