FOOD FRIDAY: VENISON & MUSHROOM FILO PARCELS

Something a little different for this week's Food Friday.

Crisp golden filo pastry filled with tender Cowal Deer venison, mushrooms, onion and a creamy mustard sauce. These Venison & Mushroom Filo Parcels look impressive on the plate but are surprisingly straightforward to make.

Perfect with potatoes and seasonal vegetables for a weekend dinner.

INGREDIENTS

* 500g Cowal Deer diced venison, cut into small pieces
* 200g mushrooms, finely sliced
* 1 small onion, finely chopped
* 1 garlic clove, crushed
* 1 tbsp wholegrain mustard
* 100ml double cream
* 1 tsp dried thyme
* 6 sheets filo pastry
* 30g butter, melted
* 1 tbsp oil
* Salt and black pepper

METHOD

1. Preheat the oven to 200°C/180°C fan.

2. Heat the oil in a large frying pan over a high heat.

3. Add the venison and quickly brown it in batches. Remove from the pan and set aside.

4. Reduce the heat and add the onion and mushrooms. Cook until softened and any excess liquid from the mushrooms has evaporated.

5. Add the garlic and thyme and cook for another minute.

6. Return the venison to the pan and stir through the wholegrain mustard and cream.

7. Cook briefly until the sauce has thickened, then remove from the heat and allow the mixture to cool slightly.

8. Lay out the filo sheets and brush lightly with melted butter. Layer the sheets together before cutting into sections.

9. Spoon the venison filling into the centre of each section and fold the pastry around the filling to create individual parcels.

10. Brush the tops with a little more melted butter and bake for approximately 15–20 minutes, until crisp and golden.

11. Serve hot with potatoes, seasonal vegetables or a fresh salad.

Would you serve these as a main course, or make smaller versions as a starter?

And what sauce would you put alongside them — creamy peppercorn, red wine, gravy, or no sauce at all?

ALASKA EXTREME LITE – UPDATED STOCK NOW AVAILABLE

We’ve just updated our stock of the Alaska Extreme Lite Jacket and Trousers, available in both Night Green and BlindTech Invisible Camo.

A firm favourite with Joe and Martin, who both wear the Extreme Lite range when they’re out stalking and can vouch for how well it performs in real conditions.

FOOD FRIDAY: VENISON KOFTA FLATBREADS WITH MINT YOGHURT

Looking for something a little different for dinner this weekend?

These Venison Kofta Flatbreads are packed with flavour, simple to make and a great way to use Cowal Deer minced venison. The rich flavour of the venison works brilliantly with warm spices, fresh salad and a cool mint yoghurt.

A great Friday-night meal where everyone can build their own.

INGREDIENTS

For the koftas:

* 500g Cowal Deer minced venison
* 1 small onion, finely grated
* 2 garlic cloves, crushed
* 1 tsp ground cumin
* 1 tsp ground coriander
* 1/2 tsp smoked paprika
* 1 tbsp chopped fresh parsley
* Salt and black pepper
* 1 tbsp oil

For serving:

* 4 large flatbreads
* Shredded lettuce
* Sliced tomato
* Thinly sliced red onion

For the mint yoghurt:

* 150g natural yoghurt
* Small handful of fresh mint, finely chopped
* Squeeze of lemon juice
* Pinch of salt

METHOD

1. Place the minced venison, onion, garlic, cumin, coriander, paprika and parsley into a bowl. Season well and mix together.

2. Divide the mixture into 8 portions and shape each one into a short kofta.

3. Heat the oil in a large frying pan over a medium-high heat.

4. Cook the koftas for around 8–10 minutes, turning regularly, until browned and cooked through.

5. Mix the yoghurt, mint, lemon juice and salt together in a small bowl.

6. Warm the flatbreads and fill with lettuce, tomato and red onion.

7. Add the hot venison koftas, spoon over the mint yoghurt and serve straight away.

Would this make it onto your Friday-night menu?

What would you add to yours — extra chilli, more mint yoghurt, a little cheese, or would you keep it just as it is?

Tuesday walkies essential — and there’s a NEW bigger box in at Croot’s.

We’ve now got Beco Dog Poo Bags available in several handy formats, so whether you like to grab a bag from a box by the door or keep a roll tucked in your pocket or dispenser, there’s an option to suit you.

NEW TO THE SHOP — 315 Beco Poo Bags with Handles
A great option for regular dog walkers and multi-dog households. The easy-tie handles make tying up quick and simple, while the larger 315-bag box means you can stock up and forget about running out for a while.

We also have:
120 bags on rolls with handles
120 bags on rolls without handles
120 folded bags with handles

Beco bags are made to be strong, thick and leakproof, helping keep dog walks straightforward and your hands protected. They’re also made using post-consumer recycled plastic, giving existing plastic another useful life rather than relying on new plastic.

It might not be the most glamorous part of owning a dog, but a good poo bag is one of those things you really notice when it lets you down. These are practical, reliable and easy to keep ready for every walk.

Pop into Croot’s and pick up the format that works best for you.

FOOD FRIDAY: STICKY HONEY & MUSTARD VENISON KEBABS

Here's one to save for the next dry evening — although they're just as good cooked indoors if the Scottish weather has other ideas.

These Sticky Honey & Mustard Venison Kebabs use Cowal Deer diced venison with a simple sweet and savoury marinade. Add peppers and red onion and you've got an easy dinner that's full of colour and flavour.

INGREDIENTS

* 500g Cowal Deer diced venison
* 2 tbsp runny honey
* 2 tbsp wholegrain mustard
* 1 tbsp olive oil
* 1 tbsp Worcestershire sauce
* 1 garlic clove, crushed
* 1 red pepper
* 1 yellow pepper
* 1 red onion
* Salt and black pepper

METHOD

1. Place the honey, mustard, olive oil, Worcestershire sauce and crushed garlic into a large bowl and mix together.

2. Add the diced venison, season with black pepper and stir until the meat is well coated.

3. Cover and leave to marinate in the fridge for at least an hour if you have time.

4. Cut the peppers and red onion into chunky pieces.

5. Thread the venison, pepper and onion alternately onto skewers.

6. Cook under a hot grill, on a griddle pan or on the barbecue, turning regularly and brushing with any remaining marinade as they cook.

7. Cook until the venison is browned on the outside and cooked to your preference.

8. Serve with rice, salad, flatbreads or some homemade wedges.

These could divide opinion, so we're putting it to you:

Honey and mustard — a winning combination or not for you?

And if you were making your own venison kebabs, what would you put on the skewer alongside the venison?

Cowal Deer venison is available from Croot’s Country Store.

SPOTLIGHT THURSDAY – THE TRAVELLING BEE COMPANY

There’s something a little sweeter in this week’s Spotlight Thursday.

At Croot’s Country Store, we stock a lovely selection from The Travelling Bee Company, a family-run business producing award-winning raw, natural and unprocessed honey alongside a range of handmade honey and beeswax products.

Their bees are kept across the North East of England and Scotland, with hives moved to carefully chosen locations to give the colonies access to different flowers and trees throughout the seasons.

Our honey selection includes:
• Scottish Flower Honey – a beautifully versatile Scottish honey, perfect on toast, in porridge, with yoghurt, in baking or simply straight from the spoon.

• Scottish Heather Honey – harvested from wild heather moors above the shores of the Kyles of Bute here in Argyll. It has a rich, strong flavour and thick texture and was awarded 2 stars at the Great Taste Awards.

• Apple Orchard Guest Honey – a raw and unprocessed guest honey from an English orchard in Cambridgeshire. The Travelling Bee Company’s Guest Honey range is all about finding special honeys from trusted beekeepers further afield and bringing something a little different to the range.

And it isn’t just honey.
We also stock a selection of their honey-based and beeswax products, including handmade soaps, organic lip balms, hand balm and beeswax candles. Their balms, soaps and gift products are made using their own honey, making them a lovely choice for a small gift or a treat for yourself.

The Travelling Bee Company has received 15 Great Taste Awards across its range, including three coveted 3-star awards, so if you appreciate proper, carefully produced honey, this is definitely a range worth discovering.

Pop into Croot’s Country Store and have a look at the range for yourself. Whether you’re after a jar of local Scottish honey, something different from the Guest Honey range, or a honey-inspired gift, there’s plenty to choose from.

Treats Tuesday – Hollings Sprats

Looking for a simple, natural treat with plenty of crunch? Hollings Sprats are a brilliant choice for all dogs and one of those treats that really does keep things straightforward.

Made from 100% fish, these whole sprats are gently air-dried to lock in their natural flavour and goodness. They’re naturally rich in Omega 3 & 6 fatty acids, helping to support healthy skin, a glossy coat and healthy joints. They’re also grain-free, with no artificial colours, flavours or preservatives.

Give them whole as a crunchy reward, break them into smaller pieces, or add a few to your dog’s dinner for an extra tasty treat.

We stock both sizes in the shop:
100g bags – ideal for trying them or keeping handy for treat time.
500g tubs – perfect for dogs who already know exactly how good sprats are.

Pop into Croot’s Country Store and pick up a pack for your four-legged taste tester.
