What do you all do with your delicious Hunter Valley eggs from your Box Divvy boxes? I love to make a HUGE zucchini slice, but I like to call mine a veggie slice as I add a variety of veggies to ours…carrot, broccoli stalks, leeks and of course zucchini 😋

I freeze half to pop into lunchboxes when we’re on the go and the other half gets demolished almost as soon as it comes out of the oven.

It’s great as a quick snack or for something more substantial we enjoy it with a salad 😋

Fennel slaw…..simply delicious! 🤪 I slice up cabbage, fennel, Granny Smith apple and carrot, mix through mayo and sprinkle with dill or whatever other herbs I have to hand. Add as a side to a main meal or enjoy as a yummy snack. If you’re not sure how to use fennel but want to get it into your diet you might want to give this one a go!
