Beauty in non-uniformity, often described as Wabi-Sabi, is the appreciation of authentic beauty found in impermanence, imperfection, and asymmetry, opposing the pressure for flawless, cookie-cutter standards.

This is Pink Velvet oyster.

We chose to put our farm in busy Brisbane, within a surprising 1km radius of the CBD, James St, and Howard Smith Wharves bustling dining precincts. In the city we could grow our mushrooms where people will be using them the most. We wanted it to be easy for Brisbane chefs to pop over between shifts, create connection and show their teams how food is grown. We wanted it to be accessible for the community to walk or take public transport, so that going to a farm wasn’t exclusive.

Another benefit? Our hyper local location also allows us to reduce food travel. We have the unique ability deliver fresh mushroom orders by foot to kitchens around the area. Now more than ever it helps us reduce fuel use, keep our budget and It’s good to get those steps in too. We also take advantage of the cross river ferry to expand our foot travel options into the South Side.

So if you see one of us walking through Brisbane with a box or two of mushrooms, feel free to say g’day to your local farmer! 👋
