New fillet knife just came off the bench. The blade is 7” of Nitro V, a stainless steel that holds an edge well and resists corrosion, which matters on a knife that spends its life around water and fish.

The handle is GripX from Grip-Tec. It keeps its grip when your hands are wet, slimy, or cold, so you aren’t fighting the knife halfway through a limit of fish.

The whole knife weighs 2.8 oz. That’s lighter than most people expect when they pick it up, and it makes a real difference when you’re breaking down a cooler full of fish.

It ships with a Kydex sheath.

This will be up on the website soon, but if you want it before then, send me a DM.

Last summer James Puckett came to my shop for a 3 day class to learn to make kitchen knives. He had been making knives for years but never made a chef knife. He was an amazing student and in the last 17 months he has earned his Lonestar Maker status with the Texas Knifemakers Guild, made dozens of kitchen knives, set up at his first show (done 3 total now), been elected to the TKG board, and even got published in the Blade Magazine Knives 2027 book. I’m so proud of you James but even more thankful to call you my friend!

American Made!! James Puckett shows his love loud and proud.

I’ll be entering five knives for Best Kitchen Knife at the Texas Custom Knife Show.

Thankfully, I have some amazing photography from Jocelyn Frasier to show off each of these knives. Each one features a different Damasteel pattern and a combination of materials chosen to complement the blade.

1. Filet
Damasteel Jörmungandr pattern with a white spun glass and opal handle.

2. Bunka
Damasteel Vinland pattern with curly maple and mammoth.

3. Gyuto
Damasteel Jörmungandr pattern with Ancient Bog Oak, Tasmanian Blackwood, copper, and Trustone.

4. Nakiri
Damasteel Munin pattern with lemon, Trustone, and masur birch.

5. Serrated Bread Knife
Damasteel Vinland pattern with Dank Resin.

Five knives, five distinct designs, and a lot of time and attention invested in each one.

I’m proud of how these turned out, and I’m excited to put them in front of the judges tomorrow.

Which one is your favorite? A, B, C, D, or E?

🔥 FOUR STAINLESS DAMASCUS PARING KNIVES 🔥

Small knives. Big personality.

I’m bringing four new paring knives to the show this weekend in Conroe, and each one has its own look and character.

Three feature Damasteel stainless Damascus, while the fourth showcases stainless Damascus from Damaworks. All four are paired with unique handle scales from Flying Shark Knives, bringing their own colors, textures, and character to each knife.

From bold pink and turquoise to natural tones and striking blue accents, these four are anything but ordinary.

They’re built to be beautiful, but they’re made to work. These are functional kitchen knives with the performance to back up their looks.

Want to see them in person? Come find me at Table 23 in Conroe this weekend!

Stop by, check out the details up close, and let’s talk knives!

This five-piece Damasteel kitchen set started with a conversation at a show back in February.

We originally settled on a five-piece set in Nitro V, with all five handles coming from a single large block of stabilized Tasmanian Blackwood from Knight Stabilizing.

A few months later, just before I started the set, the customer reached back out. He loved the look of Damascus but didn’t want to worry about rust, maintenance, or losing the detail of the pattern as it patinated.

I brought up Damasteel stainless Damascus. I had been loving working with it and the results I was getting. We talked through the options and the additional cost. It was a substantial increase in the investment, but he trusted my recommendation.

Then he sent me an email that said:

“I’m your huckleberry. Make them as pretty as you can so that I can have the best set of kitchen knives for the rest of my life.”

That kind of trust means a lot to me as a maker.

A few weeks ago, I was able to get the finished set in front of Jocelyn Frasier for professional photos. She is, in my opinion, the best in the business, and she absolutely nailed these.

After the photos, I shipped the set to its new home. His response was everything I could have hoped for. He told me they were “pieces of art.”

Taking an idea that starts as a conversation and turning it into something that exceeds the customer’s expectations is one of the most rewarding parts of what I do. Every Steel Dog knife is one of a kind, and this set is no exception.

I really hope these knives become part of countless meals, celebrations and memories with friends and family for many years to come.

As a small thank-you for believing in me and trusting me to bring this set to life, I also made a custom leather knife roll for the set.

Thank you for trusting me with this project. It was an honor to make it.

One of my favorite parts of the Cowtown Custom Knife Show happens away from the tables.

My friend and fellow maker Micah Dunn and I do a short chef knife demonstration where we talk about what makes a great chef knife. This year, we covered everything from comfort and geometry to edge thickness, steel, heat treatment, and the things that actually matter when you’re using a knife in the kitchen.

It’s usually a smaller crowd, but the people who stop are genuinely interested. They ask questions, want to understand why we do things the way we do, and we get to talk about something we both love.

Today was especially cool.

A family stopped by with a friend who is a new knifemaker from Argentina. He didn’t speak any English, so his friends translated our entire demonstration and his questions for him.

And this guy was so excited to learn.

His friends told us that being at the show was like Disneyland for him. I completely understood. There’s something pretty special about walking into a room full of makers, seeing all the knives and materials, and meeting people who share the same passion.

I even loaned him one of my EDC knives so he could participate in the TKG EDC Challenge, which made his day even better.

What struck me most was how quickly we connected. We live in different countries, speak different languages, and had never met before, yet we bonded almost instantly over our shared passion for knives and making them.

I’ve always said that I don’t have any secrets in knifemaking. Everything I know, I learned from someone else. Someone took the time to answer my questions, show me a process, share an idea, or let me learn from their experience.

So I want to do the same.

I’m looking forward to hearing from him, answering his questions, and watching his journey as he develops as a maker. If I can help him learn something, avoid a mistake, solve a problem, or simply get more excited about making knives, I’m happy to share whatever I know.

We were all new once.

And sometimes the best part of a knife show is realizing that a shared passion can bring two people together, even when everything else between them is different.
