* 8 ounces white cheddar cheese (shredded on the large holes of a box grater (2 cups shredded))
Instructions
Step 1: Preheat the Oven
Preheat an oven or an air fryer to 400°F. This temperature is crucial for achieving crispy fries.
Step 2: Prepare the Fries
Arrange frozen French fries in a single layer on a large rimmed baking sheet or in an air fryer basket. Bake them according to package instructions or air fryer guidelines until golden brown.
Step 3: Make the Roux
In a 2-quart saucepan over medium heat, melt butter until it is bubbly. Whisk in all-purpose flour until combined, cooking for about 2 minutes until thickened.
Step 4: Create the Cheese Sauce

* 1/3 cup dill pickles, finely chopped
* 3 tablespoon ketchup
* 1 tablespoon yellow mustard
* 1 tablespoon Worcestershire sauce
* 1 teaspoon garlic powder
* 1/2 teaspoon smoked paprika
* Salt and pepper to taste
* 12–16 egg roll wrappers
* Oil for frying (vegetable or canola)
* 1/2 cup mayonnaise
* 2–3 tablespoon ketchup
* 1 tablespoon yellow mustard
* 1 tablespoon sweet relish
* 1/4 teaspoon garlic powder
* 1/4 teaspoon onion powder
* Pinch of cayenne pepper (optional)
* Salt and pepper to taste
INSTRUCTIONS
