🍲🍗 Parmesan Chicken Meatball Soup 🍗🍲
A comforting and hearty soup featuring tender chicken meatballs, fresh vegetables, and a sprinkle of Parmesan, perfect for cozy nights or family gatherings.
Ingredients:
Chicken Meatballs:
1 pound ground chicken
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup bread crumbs
1/2 cup freshly grated Parmesan
1 egg
Soup:
2 tablespoons olive oil
1 onion, diced
2 ribs celery, diced
2 carrots, peeled and diced
2 cloves garlic, minced
1/2 teaspoon salt
4 cups chicken broth
4 cups water
1 cup small pasta, such as orzo, stelline, or ditalini
2 cups spinach, roughly chopped
Parmesan, for serving
Directions:
Make the Meatballs: In a large bowl, combine ground chicken, onion powder, garlic powder, dried parsley, salt, black pepper, bread crumbs, Parmesan, and egg. Mix until well combined. Form the mixture into small meatballs, about 1 inch in diameter.
Brown the Meatballs: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the meatballs in batches and cook until browned on all sides, about 5-7 minutes. Remove the meatballs from the pot and set aside.
Sauté the Vegetables: In the same pot, add the remaining tablespoon of olive oil. Add the diced onion, celery, and carrots. Sauté for about 5 minutes, or until the vegetables are softened. Add the minced garlic and salt, cooking for an additional minute until fragrant.
Add Broth and Pasta: Pour in the chicken broth and water, bringing the mixture to a boil. Once boiling, add the small pasta and cook according to package instructions, usually about 8-10 minutes.
Return Meatballs and Add Spinach: Once the pasta is cooked, return the meatballs to the pot and stir in the chopped spinach. Cook for an additional 2-3 minutes until the spinach is wilted and the meatballs are heated through.
Serve: Ladle the soup into bowls and sprinkle with extra Parmesan cheese before serving. Enjoy this warm and nourishing chicken meatball soup!
