The Lagotto is the only purebred dog in the world recognized as a specialized truffle hunter.

Not the only breed that can be trained to find truffles. The only one bred for it specifically — for centuries, in the marshlands of Romagna in northeastern Italy, where the wetlands gave way to the truffle grounds and the dogs that worked the water shifted into the dogs that worked the soil.

This is what you are watching when a Lagotto sniffs.

Three hundred million olfactory receptors. Stereo nostrils that sample independently. A brain region devoted to scent that is forty times larger relative to body size than ours. The dog is not sniffing around. The dog is computing.

Tia's litter was born Saturday — five boys, two girls. We are now through the first 72 hours, which is the most consequential window of a puppy's life and the part of breeding that nobody outside the whelping box ever sees.

Newborn puppies typically lose between five and ten percent of their birth weight in the first 24 hours. They have to recover that weight by day three or there is a problem. We weigh every puppy twice daily during this window. We watch every latch — not occasionally, but every feeding for the first 48 hours — to confirm each puppy is getting milk and that none are being pushed off the teat by stronger siblings.
Dehydration in a three-day-old puppy can become critical in hours. We check skin elasticity, mucous membrane color, and urine output on every puppy, every shift.

For the first three nights, we sleep next to the whelping box. Not in another room with a monitor — beside the box. The reason is the mother. First-time and second-time dams sometimes need help settling into the role. A puppy that gets caught under a leg and cries out needs a human response within seconds, not minutes. By night four, the rhythm is established and we can step back.

This is what the first week looks like at Northwest Lagotto. The protocol is in place because we have done this enough to know what fails when it isn't.

They were born on Saturday. These photos are from day three — the morning we begin Early Neurological Stimulation. Eyes still closed. Ears not yet open. The puppies cannot regulate their own body temperature and cannot yet hear their own mother. What they can do is smell, root, and respond to touch. That is everything we need.
A few seconds per puppy, once a day, for thirteen days. Cold cloth, warm hand, supine hold, head tilt, prone position. The protocol was developed by the U.S. military in the 1960s for working-dog programs and refined by Puppy Culture for breeders working at this level. It is not training. It is the deliberate introduction of mild, novel stress to a developing nervous system that is, briefly, designed to handle it.

The signs were starting.

Restless. Nesting. The way she keeps looking at me, then looking at the box, then looking at me again. We've been here before, but it never stops feeling like the first time.

Mousse is upstairs. Tracy has the towels stacked. The heat lamp is warm. Tia has decided that wherever I am sitting is exactly where she needs to be.

and then! We suddenly had our first puppy! Over the next few hours — and into tomorrow — there will be more puppies.

There is exactly one dog breed in the world that was developed specifically to hunt truffles.
Not retrievers. Not spaniels. Not any of the working breeds most people think of when they hear "scent dog."
The Lagotto Romagnolo.
The breed originated in the marshlands of the Romagna region of Italy — originally a water retriever, working the wetlands that once covered that part of the country. When those marshlands were drained in the nineteenth century, the Lagotto lost its job. What it kept was its nose.
Italian farmers discovered that the same dog who had spent centuries learning to work water and terrain could be redirected toward something far more valuable than waterfowl: Tuber magnatum. White truffle. The most expensive food product on earth by weight.
The breed nearly went extinct in the mid-twentieth century. A small group of Italian breeders spent decades tracing the remaining genetic lines and rebuilding the population. The Lagotto received official FCI recognition in 1995. AKC recognition followed in 2015.
Today, the breed is the only one in the world with an official designation as a truffle hunting dog. That nose — the one refined over centuries of working wetlands and forests — is the same nose that wakes up every morning in our kennel in Lynden, Washington, and immediately begins cataloguing everything within a quarter mile.
They are extraordinary animals. We've spent eleven years trying to do right by them.
