We’ve got another great lineup of local farms, food producers, makers and community organizations joining us this week! Come fill your bags with fresh produce, mushrooms, eggs, poultry, pork, sourdough, honey, maple syrup, hummus, baked treats and more, grab something delicious to eat, and browse locally made art, cards, 3D-printed gifts and wooden creations.

💚 And this week is about more than shopping local! We’ll also be collecting:

🐾 Food & supplies for the Dutchess County SPCA
🥫 Food donations for the Hyde Park Food Pantry

Plus, stop by our community tables and say hello to DS Home Services and the Viola Rod & Gun Club!

🌱 And of course, don’t forget POP Club! Kids ages 3–12 can join us for another FREE hands-on activity, learn where their food comes from, and earn $2 in POP Bucks to spend on fresh produce at the market!

🥚🐓 IT’S EGG WEEK AT THE HYDE PARK FARMERS MARKET — and Lasher Meadows is bringing the FARM-FRESH POULTRY too! 🦆🪿🐖🌿

If you’ve been following along with Egg Week, you know by now that an egg is definitely NOT just an egg! Different birds give us eggs with different sizes, flavors, textures, yolk-to-white ratios, and some pretty amazing uses in the kitchen.

TODAY at The Hyde Park Farmers Market, Lasher Meadows Farm will have FIVE TYPES OF FARM-FRESH EGGS! 🥚🥚🥚

🐓 Chicken Eggs — the everyday favorite and incredibly versatile.

🦆 Duck Eggs — larger, richer and creamier, with big beautiful yolks. Fantastic for baking and for anyone who loves a seriously good fried egg!

🦃 Turkey Eggs — rich, creamy and a seasonal farm treat you definitely won’t find in the grocery store.

🐦 Quail Eggs — tiny but mighty! Considered a delicacy around the world and perfect for appetizers, salads, pickling, ramen and those adorable little fried eggs.

🐦 Guinea Hen Eggs — one of our favorites! Richer and more savory than chicken eggs with an approximately 50/50 yolk-to-white ratio. They’re AMAZING for homemade pasta, custards, sauces and anywhere you want extra richness. About 2 guinea eggs = 1 chicken egg.

🥚💙 EGG WEEK: THE GUINEA HEN EGG! 💙🥚

We saved a pretty incredible little egg for last!

Guinea hen eggs may be small, but they have BIG flavor. With approximately 50% yolk and 50% white, they’re exceptionally rich and creamy, with a deeper, more savory flavor than a typical chicken egg.

🍝 And homemade pasta makers—you NEED to try these! That beautiful high-yolk ratio makes guinea hen eggs absolutely fantastic for fresh pasta. They’re also wonderful for rich sauces, baking, frying and anywhere you want that extra yolky goodness.

🥚 About 2 guinea hen eggs = 1 chicken egg
💛 Approximately 50% yolk

If you’ve never cooked or baked with a farm-fresh duck egg, you’re missing out!

We’re starting with the egg everybody knows and loves—the chicken egg!

But open a dozen from Lasher Meadows and you’ll quickly see that chicken eggs aren’t all the same. ❤️

Our hens give us a beautiful rainbow of egg colors—different shades of brown, cream, white, blue, green and more. No two dozens look quite alike! 🥚🤎🤍💙💚

Our chickens are raised right here on the farm, cared for by us every day, and fed locally-grown feed. Their eggs are collected fresh and ready for your kitchen.

And chicken eggs really are the ultimate staple—scrambled, fried, hard-boiled, baked into something delicious or turned into quiche, pasta and more.

Stop by to learn how you can start composting right at home — what can go into your compost, how to get started, why it matters, and how those everyday kitchen and yard scraps can be turned into something incredibly valuable for the soil. 🌱

♻️ POP CLUB: COMPOST CREW! 🪱🍂

Our POP kids are becoming official members of the Compost Crew this week!

We’ll dig into the amazing world happening inside a compost pile with fun, hands-on activities, including:

🪱 Meet the Decomposers and discover the tiny creatures doing some BIG work
♻️ Learn what belongs in the compost — and what doesn’t
🌱 Build your own mini compost bottle to take home, watch, and observe as it changes
🍌 Take on our Compost Crew Take-Home Challenge and save compostable food scraps to bring back next week for the Lasher Meadows compost pile!

And, of course, POP Club members who complete this week’s activity earn their $2 in POP Bucks to spend on fresh produce at the market! 🥕💵
