This Greek inspired quinoa is getting put back into rotation for side dishes and meal prep 😍

Quinoa
Cucumbers
Tomatoes
Purple onion
Feta
Kalamata olives
Fresh parsley

Dressing:

Fresh squeezed lemon juice
Red wine vinegar
EVOO
Minced garlic
Honey
Sea salt
Black pepper

(I added some chickpeas to mine because I had some in the fridge that needed to be used).

I cannot wait to make this with homegrown cucumbers and tomatoes soon!

I’m officially hooked on this sweet, mild, CRONCHY romaine-type lettuce 😍.

This Crisp Mint lettuce was started in a seed snail before being transplanted outside in one of our beds. So far we’ve enjoyed this lettuce as wraps and munching outside but I’ll be doing a salad with it today or tomorrow.

😮That’s roughly equal to 2 MONTHS of average precipitation MISSING 🌧️➡️☀️.

👀Another way to look at this:
🗓️-6.11” Since Jan 1
🗓️-23.02” Cumulative shortfall since Jan 1, 2024
😮That’s roughly equal to 6 MONTHS of average precipitation needed to break even!!!

What this can mean:
▫️ Drier soils & stressed BROWN lawns/gardens
▫️ Lower stream levels in some areas. Liberty Reservoir by Rt. 140 was non existent when I drive by yesterday.
▫️ Faster drying during warm, windy stretches
▫️ Growing concern if summer heat increases

‼️Even after occasional heavy rain, long-term deficits can take months to erase.
