In liver fluke infestation, the liver is badly damaged. A damaged liver can’t make enough albumin protein. Low albumin means low protein in the blood, which decreases oncotic pressure. This causes fluid to leak from blood vessels and accumulate in the loose tissue under the jaw. This swelling under the jaw is called submandibular oedema or bottle jaw.
