Just received some koji and I’m honestly excited to start playing with it.

It sits in that interesting space between mold and mycology, where things blur a bit.

Same principles, different applications.

Feels like a natural extension of what I’ve been building, just coming from another angle.

Let’s see where it goes.

This weekend we quietly laid the foundations at the community mushroom garden.

The first outdoor mushroom growing workshop took place, small group, hands on.

At the same time, the space has shifted. The shed is up and has a roof, the area is now clearly defined, and the community mushroom garden is no longer an idea, it’s something you can walk up to and build on.

The first beds have been set:
a wine cap bed settling into the soil,
a blue oyster straw tower starting its cycle,
and black oysters joining the mix.

It’s a simple start, but it’s the right one. Built with people, not just for them.

No photos this time. Sometimes you’re too busy doing the work to document it. That’s fine.

Next step is to keep building, keep growing !

Working towards an umami-rich vegan mushroom gravy.

Burnt onions for depth, mushrooms pushed hard in the pan, herbs in, deglazed with red wine, then left to do its thing low and slow.

Strained it out, brought it back, added a touch of tomato for body, and reduced it down.

Still refining, but getting closer to something I’d be happy to freeze dry and keep on hand.

Back in September I spoke about building a community mushroom garden.

Then winter hit. Things slowed down, as they do.

I went down to yesterday to catch up ahead of this week end workshop on the 27th, and Kevin showed me what’s been happening in the background.







Honestly, it caught me off guard.

The shed is up.
The beds are in.
The space is real.

Volunteers have been putting in the work quietly, just showing up and building it.

This weekend, during the workshop, we’ll be building more beds live and starting to develop the area for growing wine cap mushrooms.

What started as an idea is now something tangible.

Now it’s time to keep pushing it forward.

Working with what’s available.

Turn a pre-cooked wholegrain rice pouch into a quick grain setup, ad an injection port and a simple filter patch made of micropore tape !

If you’ve got liquid culture but no grain ready, this is one way to start playing around without a full setup.

Not contamination-proof, but it can give you a clean starting point to understand the process.

Outdoor Mushroom Growing Workshop

In this session we explore simple ways to grow mushrooms outside using low tech methods. We’ll look at wine cap beds, growing in containers or straw towers for oyster mushrooms, and the basics of log inoculation.

There will be live demonstrations and some hands on practice. Participants will also receive some wine cap spawn to start their own patch at home.

A few moments from the past weeks working with mushrooms.

Grain preparation, workshops, experiments with freeze drying, and getting ready for the next sessions.

Next up is a workshop focused on growing mushrooms outside. We’ll look at simple methods using logs, straw towers and wood chip beds, and which of these can be adapted to take home and grow from a balcony or small London space.

Morning in the lab. Inoculating dowels with grain and agar, then moving straight into grain prep. One batch of wholegrain rice for simple home grows, another batch of rye for more vigorous cultures. Clean work, steady process, building the next rounds of mycelium.

Over the weekend we worked with black pearl oysters during the workshop, looking at cloning and understanding how mycelium grows.

The idea was to show how you can start experimenting with mushrooms at home using simple materials.

Things getting ready for tomorrow.

Still air box cleaned and ready.
Fresh cultures prepared.
Little starter packs assembled so everyone can keep experimenting at home.

Inside the bags: hardwood pellets and a bit of gypsum. Just add hot water to rehydrate, add your mycelium and create your own mushroom grow bag !

Simple tools, simple methods, but enough to open the door to growing your own mushrooms.

Final touches on the slides this week.

This Saturday is the first weekend workshop at 2–4pm.

If you’re curious about growing your own mushrooms at home using simple, everyday materials, this is for you.

You’ll leave with the knowledge to start properly, a live sample of mycelium to kickstart your grow, and a few practical bits to help you work clean and confidently at home (wipes, gloves, and guidance on creating a simple sterile setup).

No overcomplication. No gimmicks. Just understanding what you’re doing and why.

There are still a few seats left for Saturday.
